Pecan and Maple Loaves

One of the things I find when I'm baking is that I tend to use something - whether a particular bake, method or ingredient - and develop it as a theme for a while. Both nuts and maple syrup have featured in a few of the things I've baked recently (see Chocolate and Hazelnut Praline Tart , Walnut, Fig and Blue Cheese Tart and Spiced Pumpkin Cupcakes with Maple Frosting ). It helps me focus on developing my knowledge and techniques. This little recipe introduced me to the idea of candied nuts - which are strangely addictive to munch on and yet so easy to make.  The recipe is adapted from the latest in the Great British Bake Off books  'Learn to Bake' . This is in a different format from its predecessors, and is very much aimed at the novice baker. There are lots of recipes though that would appeal to more advanced bakers, too. These little cakes are easy to make, but full of flavour. Maple Leaf Cupcakes

It's been a bit quiet on the baking front recently, but as one of Mike's colleagues left the company this week, I needed to get my baking tins out. D'arcy and his family are relocating to Toronto. How exciting is that? And to mark the occasion I wanted to try and make something that he would like. These are chocolate cupcakes, covered in Maple Syrup Frosting, and decorated with little sugar fondant maple leaves. I'm not terribly good with sugarpaste. Sadly, the leaves didn't turn out as well as I'd hoped, as it was difficult to get the colour right with the materials I had. I basically coloured three different shades of fondant - orangey, red and reddy brown - to try and get autumnal shades. Then I cut out different sized maple leaves and pressed them with a veiner. Having left them to dry for about 8 hours (over crumpled baking parchment to get a curled effect), I then dusted them with some gold, brown and terracotta flower dusts. The block colours were...

Maple Syrup Cake for the Weekly Bake Off (aka Icing Hides Many Things)

I'm really pleased to have discovered the Weekly Bake Off , (thanks to the morethanoccasionalbaker ), and which is organised by Amy from the Great British Baking Club . It's based on the challenge of baking every one of the 100 recipes in 'Mary Berry's 100 Cakes and Bakes'. I think it's a great way of expanding your repetoire and trying something new! This week, the bake off recipe is the Maple Syrup Cake, and I decided to have a go. Sadly, there will be no star baker badge for me this week. If there was a badge for funniest bake though ... I'll be upfront about this. It has been a disaster. It was going well up until putting the cake in the oven. The batter tasted really nice (yes, spoon licking does take place in this household). The cake looked lovely and level in the pan, so into the oven it went. The recipe says to bake for 1 - 1 1/2 hours.
